Celebrate Mint Chocolate Day with this delicious vegan, chocolatey, minty recipe!
Ingredients
- 200g Enjoy Dark Chocolate Bar or Mint Chocolate Bar (depending on how minty you want the brownies)
- Bag of Mint & Chocolate Fudge
- White chocolate baking drops from Moo Free
- 80g vegan butter
- 125g self-raising flour
- 150ml OGGS® Aquafaba
- 50g cocoa powder
- ¼ tsp baking powder
- 250g coconut sugar
- 1½ tsp peppermint extract
Method
- Pre-heat oven to 170C / 150C fan / 3 ½ gas.
- Grease and line a suitable baking tin with baking parchment.
- Melt the dark chocolate bars and peppermint extract with 60ml of water on a low heat. Once melted, remove from the heat.
- Add the flour, OGGs Aquafaba, butter, cocoa and baking powder into a bowl and stir, making sure to remove any lumps.
- Using a hand whisk, mix the coconut sugar into the melted chocolate mixture and beat well until the sugar is completely dissolved and it looks smooth and glossy.
- Stir the chocolate mixture and flour mixture together. You may need to add a little more water- the mixture should be quite firm, but you need to be able to work it!
- Cut the Enjoy! fudge into small pieces and fold it into the mixture, along with the white chocolate drops.
- Combine well and spoon into the prepared tin.
- Bake for 35-40 minutes until a skewer inserted in the middle comes out clean with moist crumbs.
- Allow to cool completely in the tin, then cut into pieces.
Store in an airtight container and eat within three days - Enjoy!
